What a crown should be
The crown is the slab at the top that sheds rain away from the flue. What many houses have is a thin mortar wash with no reinforcement, no expansion joint at the tile and no overhang, so it cracks around the tile and water runs straight down the face.
A proper crown is cast, reinforced, sloped away, with a bond break at the tile and a projection past the masonry with a drip edge cut underneath.
Thermal cycling, not ice
Hot sun and heavy afternoon rain cycle a crown hard. Rigid mortar and sealant fail from that movement even with no frost involved, which is why flexible coatings perform well here.
Storm damage
Named storms crack and displace crowns directly. It is worth looking after any significant storm rather than waiting for water to appear inside.
Crown work rarely stands alone
By the time a crown is visibly cracked it has been admitting water for a long time, and in Florida that water has been sitting in masonry that does not dry.
